Broke down a whole chicken with this last night and the AUS-10 steel held a razor edge through the joints and backbone. The white handle wipes clean fast, though it shows every smear until you do.

Diced onions and bell peppers for a whole week of meals and it never once felt like it was struggling. The AUS-10 steel holds an edge way better than the cheap knife it replaced, I've only touched it up once.

The blade came sharper out of the box than my old knife ever got after honing, and it glides through onions and chicken without any drag. AUS-10 steel seems to hold its edge well too, I've used it daily for a few weeks and it's still slicing tomatoes cleanly.
